is a healthy and vibrant salad that is a traditional recipe for New Year’s
celebration we made every year in Armenia when I was a girl. Now we like to eat it any time throughout
the year, especially the next day after all the flavors have been absorbed. This
classic festive ruby-colored salad is a favorite with my family. I hope yours
likes it too.
Boil the vegetables and let them cool completely.
Dice all veggies evenly.
In a large bowl, combine all the ingredients. Add dill, salt,
and pepper. Refrigerate until ready to serve.
